The Distillerie du Fays was created in 2018 in the Liège region. It is an artisanal micro-distillery with a 250 litre still, called "Camille" by the owner. The distillation follows an old-fashioned method, letting the alcohol cook after maceration for more than 10 hours in order to extract all the aromas.
The Fays distillery offers a variety of artisanal products, such as gin, saffron pastis, absinthe, genepi liqueur, and buffalo grass gin. All these drinks are created by Alain Joiret, a spirits expert who has turned his passion into a profession.
